This dish focuses on the bright flavors of citrus and achiote - a spice blend made from crushed Annatto seeds popular in the Yucatán.

It’s traditionally slow cooked in an underground “pib” that’s buried in burning coals. Since my wife wouldn’t let me dig a hole in the backyard I had to improvise.

So, I marinated pork shoulder in Achiote, citrus, herbs and spices. Then it’s wrapped in banana leaves with tomato, onions and chiles and baked in a conventional oven for hours until perfectly tender.

The meat is shredded, then put into the Zelnik casing with more tomato, onion and Anaheim chiles, as well as Monterey Jack cheese. Served with a side of achiote sauce meant to be poured directly into the filling to really drive home the dish’s flavor profile.
